I would like to turn a music file from .wav to .aiff. I saw that with Audition need to save with name the .wav file in .aiff, but is it reliable? Audition does not modify decibels or other parameters of the .wav file?

I rip the .wav file from CD with EAC.

No modifications at all - aiff is just a container for what remains an unaltered wav file. You can open either on Macs and PCs, and you won't notice any difference.
