I've cancelled my subscription, yet I'm still getting charged

Cancellation was set to start on Sep 8. According to the e-mail I recieved and the fact that I can't access the app tells me, yup, it's sure been cancelled.

What hasn't been cancelled is my monthy payment for a service I no longer have by choice. It would be very nice to be able to have an actual human in some form to contact (e-mail, online chat, whatever) linked to your site.

It'd be nice to be able to find a way to talk to you about this, but your website does not offer one. Convenient, no?

I don't even know if this is the right place to post something like this...I'm just desperately trying everything.

as Steve said we can not help you directly. But when you go to the Support Page https://helpx.adobe.com/support/stock.html you will find the contact infos you need. Hope that helps.

I'm sorry,  but it isn't the correct place at all - we're a U2U group with no access to any registration details at all (which is, of course, as it should be). You need to contact Adobe directly to resolve this, and if you get nowhere, cancel with your bank.
