I can't seem to hear my guitar through my headphones. At the risk of sounding like an idiot
, How do I turn the volume up so I can hear my instrument in real time

How is your guitar connected to your computer and what are your headphones plugged into? It is usually down to the volume control on whatever audio interface you are using with Audition, you can't do it from within Audition assuming that you can record the guitar at a good level.
