Can I use Adobe Audition with a mac and a good pair of Senheiser mics?

Yes, but depending upon exactly what the mics are, you might need an external sound device. And a pair of headphones.

There are loads of tutorials available about using Audition for podcasts - I'd have a look at a few of those.
