Recording podcast over Zoom/Skype

as Steve said its more a matter of the Setup in general. you also can try other Streaming Recorder Software or some Online Tools like Streamyard or Riverside to record the separate Audio Tracks and mix them together in Audition. Hope that helps.

I'm afraid that this is way more complicated than you'd hoped. In Windows, you can only record from a single source, and to get around this limitation you need something like Virtual Audio Cable - which is a right pain to set up, but can create internal paths where the OS says you can't. But internally in your machine, this is what you have to achieve. Multichannel recording in Audition is perfectly possible, but only from external sources, and even then only possible if you use ASIO drivers and have an appropriate sound device.

A much easier option is to use an app like Sound Tap from NCH Software (other apps are also available - I am a satisfied customer, and no more than that) which will let you record the incoming stream, and also your mic. If you want something a little more flexible, they also have VRS, which may be more appropriate. But in essence, these apps sort out all the internal routing that VAC makes so difficult, and just lets you get on with recording.
