Adding Text Annotations - Canvas Size?

I am looking to take screen shot and add annotations to them. However, it is quite a bit of text so I was hoping to somehow put my screenshot in the center and have some blank canvas around it to add the text to. I cannot find the option anywhere to do this. Please help!
