I'm using Captivate 2017 10.0.0.192. I just switched to Windows 10, new laptop at work. The standard text button has changed it's appearance. This is a file I started when using Windows 7 and just opened in Windows 10.

Used to look like:

Now looks like:

What happened to the rounded corners and shading?

The Text button is always taking on the appearance of the system button of your OS, which explains the change. It is one of the reasons I avoid that type of (legacy) button whenever possible.  Shape buttons, transparent buttons and image buttons give you control over their style, not the Text button. Do you need to keep the previous style? Not sure if the system button can be changed, but you could replicate the old style using a transparent button filled with a gradient, or a shape button. Limitation of shape buttons is that they cannot be used on quiz slides. All themes in Captivate use transparent button as style for quizzing buttons.
