Changing default language of project for assistive technologies

When using assistive technology such as a screen-reader, text will be rendered more accurately when the language is identified. Screen readers can load the correct pronunciation rules. Visual browsers can display characters and scripts correctly. Media players can show captions correctly.

That being said if a project is created in Captivate where the default language is English (because that was the language identified when Captivate was intalled) then it was translated to another language (French), how do we specify the translated project as French for use with a screen-reader?
