Question

How do I keep captivate from overriding a zoom effect on a Mac?

I'm recording a video demo on a Mac and using Cmd+Opt+ + to zoom while recording. This shows while I'm recording, but disappears from the demo once I finish the recording. How can I keep Captivate from erasing this zoom? Are there any other video recording devices like Captivate that do not override the zoom while recording?

You might want to use the shortcut key for 'Capturing a screenshot manually,' by using the Command + F6 on the Mac.

While you're recording, use it before and after you use the keyboard sequence to zoom the screen.

@BDuckWorks  Sorry, the OP is talking about video demo, not about the classic capture of simulations. The work flow is different during capture, the result is a cpvc instead of a cptx file. It is pure video, can only be published to MP4, and also embedded on a CPVC slide in an normal cptx-file.

I just wonder why panning and zooming is not done after recording, with the dedicated video editor.

Did the zoom show up after you published the video? Our version will show the zoom while recording but does not show up once recording has been stopped and published.  We are using Captivate 8.0.0.145 and the Mac is OS X Yosemite 10.10.5

Please install the patch, you are still on the first version of 8.
