How to use Captivate 8 on a Samsung Galaxy S tablet to train operators how to maintain equipment

I am a trainer at a power plant.  I am looking for examples of how to use Captivate 8 on a Galaxy S tablet to teach instrumentation operators how to setup, operate, maintain, and repair instrumentation.  I plan on using videos of existing senior operators to step through information as well as information from existing manuals.  I would also like to include assessments to verify completion of steps.  Specifically our workforce is aging and we need a way to capture the experience of senior technicians so it can be passed on to new technicians.  Does anyone have examples of how this or something like this has been done before?  I would like to leverage the experience of someone who has done something similar.  Thank you, Manuel
