I am attempting to create a captivate presentation that simply records simple screen shots rather than software simulation and I cannot seem to do so. Is there an easy way to accomplish this?

Another really easy way to do it is just hit Print Screen and paste it right in Captivate. Let Captivate resize it, depending on the size of your movie.

Hi jdejongh and welcome to our community

Are you referring to pasting Print Screen images into an existing Captivate project? Or are you referring to pressing Print Screen during the recording process?

I ask, because you will see different results for each method.

Hi bankhelp and welcome to our community

When you begin the process of recording, you have a dialog you interact with that contains a Button labeled Options... If you click this button, you may select from many different settings to customize the way you record. It would appear that you really don't want any of the Demonstration or Simulation options. So I'd suggest clicking Options > Recording Options... and from the Recording Options tab, click the Edit settings... button. Once there, simply DE-select all the options on the dialog and record that way to see if it gets what you want.
