Video Demo Recording - Partial Screen Only

Hi Folks,

I wondered if somebody could help me?  I have Adobe Capture on trial to see if it fits the bill for what we are after but I have run into a problem.  When I record a new video demo I can only see about 2/3rds of the screen from the top left.  I set the recording up for full-screen settings but it makes no difference as it still seems to record only a partial screen. The taskbar and the far right of the screen are lost completely.

I am using a PC with a windows 10 OS if that makes any difference? Is there a simple setting that I am missing somewhere? I'd be grateful if someone could tell me, as the package seems exactly what I am after if I can resolve this issue.  I'd be really grateful for any advice anyone can offer me.
