Can I copy Pods between meetings so I don't have to manual create them?

    No, but you can create a Template of your room that has the pods setup the way you like them. When you move your room on Adobe Connect Central to the Shared Template folder then that room will show up as a template to copy. Look up templates in the help file for more details.
