Connect Custom Fields

We are extending our connect instance by utilizing the custom fields. However, we are not totally understanding custom field usage. Please contact me if you have experience with the XML API and Custom Field usage. Thanks.

    The doccos tell me that I can apply custom fields to SCO's. However, I don't believe that is completely correct. I seem to be able to create custom fields for users (Principals) but not for any other objects. We want to extend the metadata stored for objects (curriculums, folders, courses, etc.) but can't seem to get there. Is my assumption correct that we cannot do this? Thanks!
