We've tried multiple differnt custom light setups and filling these 3 goals has been almost impossible:

to get the product colors vibrant
small tight shadow
not have bleeds of grey (errant shadows) to the edges (especially need all edges of image to be pure white)

the basic trick is to use a blank white background image i.e, only white, and then build your lighting map to that background before added the sun light you need to make your shadow

p.s, I think your teacher wants you to understand the difference between shadow and reflexion... shadow has no colour but reflexion does so yes any [non white] studio light will defuse your model colours to some small amount

Yes, that looks like you are getting 100% white edges.

We had accomplished 100% white on some tests, but then the colors on the label would be blown out or lose vibrancy.

It always felt like the 3 goals I listed above were fighting each other.

Is there a custom light setup you're using there or a default? Curious if a color label would produce vibrnatly in your example.
