Uneditable 3D Models from Adobe Stock

I've downloaded a Turbo Squid model from Adobe Stock (Left Can), and assumed it would be layered, like the Dimension models (Right Can), but this isn't the case. It's just one single layer. I feel duped!

Am I right in thinking I can only edit the individual parts of this model via the UV Map?

I see that you have in isolated mode that includes seperate materials for seperated object. That means each folder contain its material. In Dimension you have Magic Wand Tool that allows to select separate meshes (parts of objects) and you can apply anything and work with them separately.
