Configure Default Font in Unstructured Frame 2020

I've been away from FrameMaker for several years and as I set up a new book template, I'm trying to remember how (or if it's even possible ) to configure the default paragraph font to my standard font.

Life would be so much easier of I didn't have to re-select the font and font size for every style I create.

    View > Panels > Fonts lists all fonts used in the current document. Select a font, click the "Replace" button, or double-click the font. The "Replace Font" panel lists all instances where the font is used. You can browse through the document by clicking on the instances and check the formatting.

    Select a new font in the "Replace Font" panel and click "Apply" to change the font (all occurrences including style definitions).

    The default fonts are defined by the template (which you can change, or define your own). For any existing documents, fonts are defined by the document.

    To change them involves finding and changing them everywhere they are defined, the Paragraph Catalog, the Character Catalog, and they can sneak in via content on Master and Reference Pages, as well as via overrides pretty much anywhere there is existing text.

    Newer versions of FM may or may not have tools for bulk changes of this metadata (I known there are aftermarket tools that do).
    I haven't had to do it for years, and when I did, I would save a MIF and hack it with a plain text editor.
