Before the update I was able to select eyedropper, double click the modifier circle, and the image in the eyedropper circle would be picked up, now it always picks up the color only. Has this feature been taken away or am I doing something incorrectly? I'm using an iPad pro.

It sounds like you're encountering an issue with the Eyedropper tool on your iPad Pro after the update.
To address this, please ensure that you're selecting the Multicolor Sampler icon instead of the regular Eyedropper tool. The Multicolor Sampler tool allows you to sample image data, which should enable you to pick up the image as you described.
