Adding text in Adobe Illustrator

Select the type tool (T) and either click once on the canvas (to create point text) or click and drag (to create area text).

I don't know in what circumstances you would be asked to select a symbol except when using the symbol sprayer tool, but I'm not sure how you would have ended up trying to use that when adding text. Perhaps you could show a screenshot if this situation reoccurs?
