Sorry to hear Illustrator is hanging when opening a new file. Please try renaming the CEP folder to CEP.old from this location:
Mac: /Library/Application Support/Adobe

If the issue persists, also rename the UXP folder to UXP.old from these locations:
Mac: /Library/Application Support/Adobe and \~/Library/Application Support/Adobe
Once done, relaunch Illustrator and check if it opens new files normally.
