Baffled by recolor favoring white

I've been working on creating some patterns lately and a few feature white mixed with another color. When I try to recolor using another palette, why does the white not change? I had to select all of the white objects and change them to another color before recolor would work as expected. I'm not sure what I'm missing but it's confused me long enough for me to turn to you all for help. Thanks!

Or turn off the "Preserve White" option in the Colour Reduction Options.

Thanks! This helped with a few of the patterns and the advice from the preceding reply helped with the others. I wasn't sure what was going on so the advice got me back on track.

You need to add a new color by clicking to the right of the white.
