Brush Pressure Greyed Out - Illustrator CC on Mac M1 chip

I was trying to ceate a new bursh and having the (pretty common) issue of the pressure option being greyed out. I have tried to enable adobe under the privacy settings in Automation, but when i go to this window nothing is listed. Im new to this and sure im missing something that needs to be installed - which might make for an easy fix. Any support or help is appreciated.
