How to create custom bullets in illustrator's new paragraph panel feature?

You can hack it.

It won't make handling easier, but it's possible.

There are alternative bullet characters that you can enter to create a list: #, *, >  Then put a space before the list item and format it in Zapf Dingbats or other dingbats font. Or create your own font and there are your custom bullets.

Yeah, the hacks are almost as versatile as in InDesign.

Reminds me of Illustrator's Underline feature. Introduced as a half-baked thing quite a long time ago and since then no further innovations.

Hopefully the bullets and numbering feature will take another route, avoiding permanent convoluted hacks.

You cannot do that at the moment.
