Can I keep my path as one line after outlining a stroke

My friend asked me to create a vector version of his logo so he can get in embroidered. So I did a livetrace and some of the lines he asked me to make them thinner. Is there a way to convert an outline back into a stroke so that it is a single path and anchors are in the centre and not on the outside. I've attached the image as well
