Can someone explain how to make these effects with images in Illustrator?

Could someone please describe in detail how these types of effects are achieved, what are they using, whats the process?

Illustrator is (mostly) a program that works with vectors. Those are raster (bit-mapped) images. I'd ask the question in the Photoshop forum.

They're just extreme adjustments like e.g. using Levels or Curves to eliminate details, combined with blur effects and something like a gradient map layer style to recolor everything. Otehr steps liek actualyl having to cut out silhouettes can of course be involved. As already pointed out by @Steve Werner it's nothing you would do in AI. This is photoshop all the way...
