Can't change stroke caps

I'm super new to Illustrator and am trying to change the caps on a stroke.. the line weight can change but nothing else changes when its selected.. not sure what I'm doing wrong.g

There might be a brush applied.

But you will see that in the appearance panel as well.

You would then have to delete the brush from the stroke.

    You need Appearance (normally in Properties, but you can open it from Window menu), click the hyperlink 'Stroke':
