Chinese fonts default to simplified Chinese

I'm working on a document that was created this way:

1) original Japanese text boxes and fonts

2) text boxes contents extracted with variables

3) translation of the XML to Cantonese (with traditional Chinese characters)

4) replacement of the Japanese variables with the Cantonese variables

The result is that I have Cantonese text in text boxes set with Japanese fonts.

Now, when I try to change the fonts to a Chinese font that supports traditional characters, the characters default to simplified characters.

I am not seeing a language setting that allows me to set the default language to Cantonese and force the use of traditional characters.

How do I go about that issue ?

(I'm using CC on macOS 10.13 in an English environment)

Maybe you should change the language and region of the system to Traditional Chinese 繁體中文.

Thank you Jason. When you mean the "system", you mean macOS ?

Yes, macOS.

Btw, add Traditional Chinese in language and region. Switch to it when you wanna input.
