Color Change after V27.7 Update

Forced update to V27.7, and now existing PNG files I've used 100s of times are importing a completely different color!

Your Document Color Settings are probably different from the color profile that was used to create the PNG.

Illustrator ignores (or just does not see) the profile of a PNG (if it has one) and assumes the Document color profile.

Do those PNGs have a color profile embedded?

Did you check Illustrator's color settings?

In case this update has been done automatically by the Creative Cloud app: you know that you can deactivate automatic updates, right?
