Color Issues In Illustrator

I've been using my blob brush to just color and my color panel switches to grayscale for no reason. Then when I switch from one color to the next when using the blob brush, it defaults to the last color I used. Why is this happening?

Is this issue happening on a particular document, if so please inbox the document to me, we can check and get back to you with the reason, also if this is happening on a new document as well please try what Nikhil has suggested, let us know the results for the same.

You may try resetting illustrator preferences and check if that helps.

1. Close Illustrator

2. Reset preferences by renaming Adobe Illustrator folders.

Windows:

C:\Users\nikhilgu\AppData\Roaming\Adobe

Rename Adobe Illustrator folders to old Adobe Illustrator.

Hidden Appdata folder:

Show hidden files, folders, and filename extensions in Windows 10 and earlier

MAC:

/User Library/Application support/Adobe

/User Library/Preferences/Adobe

Rename Adobe Illustrator folders to old Adobe Illustrator.

Access hidden Mac OS library files

3. Launch the application and check.

It must be something I am missing. I'm new to illustrator. I did what you said and then opened a new doc to trace. Started to trace over the template and using the blob brush instead of the pencil, I chose the black color. The moment I started to draw, it defaulted to white. I have no clue what's going on. My file names are good and I made the hidden files seen.
