Color profile illustrator

Hi everyone,

I am struggeling with my color profile in illustrator recently.
When I pick a color in the colorpicker ( for example: a BRIGHT BLUE) the result is just sober.
Which color profile should I choose to solve this? Or is it another setting? 

Mainly designing for print.

That blue is out of gamut for a CMYK document -- see the warning triangle next to it.
