Colour in app not matching export colour!

My adobe illustrator just got set up, and I have created an illustration with a low saturation. When I export it to PDF, the exported image is much more saturated than what I see in the app. The image is in CMYK, and I've checked all the settings I could find to make sure that everything is correct with those settings.

It's not a screen display problem, because when I look at both side by side on the same monitor the issue is still present.

When the Illustrator file is opened in the Illustrator app from another person's computer, it also is highly saturated, like in the export image. So I think this is a problem with the internal settings of illustrator for me.

Can anyone suggest what might be going on here?

Correct answer Brad @ Roaring Mouse

Are you viewing  the file in Illustrator with Proof Colors with the same CMYK profile assigned to the document?

What are your PDF export settings, especially re: Ouput

In Acrobat > Output Preview, are you viewing it a Simulation profile the same as your document?

Ate your Acrobat > Preferences > Color Management settings synced?

What have you set in your Edit > Colour Settings?

What is your Document Color Profile? Is it the same as your working profile from your Color Settings?

See: Edit > Assign Profile...

My colour settings are

RGB: sRGB IEC61966-2.1

CMYK: US Web Coated (SWOP) v2

My document colour mode seems to be CMYK everywhere I double check, including under Assign Profile, where it shows the working profile to be CMYK US Web Coated (SWOP) v2

It would be better if you post a screenshot of the complete dialog box. Also the same one on the other computer.
