Colours suddenly displaying overly bright and saturated

I've been working on a file all day and at some point all my colours in it suddenly became overly bright and saturated. It must be a display thing as the individual hex values remain correct and when i export an artboard and view the exported file in another app the colours look fine, it's just when i view them in illustrator. 

 

Have i inadvertently hit a shortcut for some colour profile or proofing thing?

 

I'm working on a brand new MacBook Pro M2 Max with the latest version of Illustrator CC installed, also reset illustrator preferences a few days ago too.

That may be possible, did you check View > Proof Setup and Proof Colors?

Yes, neither seems to be selected.

In the end i had to start a new Illustrator file, there must have been some profile issue going on. I think this is destined for a separate post but i need to learn how to set up profiles properly, i always have colour issues in illustrator!
