Contour Cuts

I am very new to Ai I know that I will not learn this app overnight but I am determine to try. I purchased a Roland Bn-20 and I am trying to add contour cut lines to my image. I have been using Youtube but after I offset paths and try to delete the middle of the copy image the entire image deletes and it is very frustrating. I reached out to the Youtuber a week ago but I have not recieved any response. Please can someone assist me?

I'm not exactly sure what you are doing but if your mean you want to delete the original path after offset path, try ungrouping first, and if you mean delete the "inside" part of the path (created both sides of the original path) release the compound path and ungroup.
