Create outline changing path text colors

Since one of the recent updates to Illustrator, I've noticed a bug where text will change its color from white to black. It seems to happen more to text on paths.

Attached image showing the graphic with the text path active (font is white), then the same text with the "create outline" applied and it's immediate change to black.

It sounds like an issue where more than one fill or effect is applied to the text object. When the text object is live and selected what does it look like in the Appearance panel?

Weird, the swatch color and the Fill in the Appearance don't seem to agree on what color this is.

That figures. In the appearance panel it's easy enough to remove the black fill and then add the desired fill.
