Is it possible to create a gradient swatch from a line sample of a jpg or png?

Can you please explain in detail what exactly you want to get from what?

You can sample single colors with the eyedropper tool. Don't know if you're referring to that.

Say you had a picture of a sunset and you wanted to create a gradient by sample top-to-bottom, the colours of that sunset. In my case, I want to create a complex gradient of the light/dark greys represented by the red line in this picture (jpg) so that I can produce an image in Illustrator that has those lines all the way to the edge of the canvas.
