Creating gradient mesh from shapes made in pen

I am trying to create a gradient mesh from shapes I made with the pen tool. I know that there must be a way to do this but I can't figure it out.

I tried this and its on the right track but it doesn't work for my project. I will include screenshots below. I used gradient mesh to create a gold circle but when it came to the infinity symbol it did not work and neither did her example.

You sort of can create rings in gradient mesh, but you cannot create that infiity symbol as one single shape. You will need multiple shapes that you then piece together. Here's how to make a ring: https://youtu.be/Zsbe6x5hWiM

But you might also consider the other method or even starting with a rectangle and moving the points around in order to get your desired shape.

It would have helped to see that example in your initial post.
