Does anyone know where the Crop tool is in Illustrator?

Do you mean the Artboard tool? I've changed the shortcut for the Artboard tool to 'C'. Just like Photoshop.

I feel like referring to the Artboard tool as the Crop tool would be an endless source of confusion. Especially as Photoshop has artboards too.

There are two operations called 'Crop' in Illustrator. One is available from Properties or the Control bar when an image is selected, the other is a Pathfinder operation available in the Pathfinder panel (and an equivalent Effect found under Effect > Pathfinder).
