I place an image to a AI file, add text and make a poster, finally export as JPG file

Maybe only my illusion, I felt the image not clear as original, will above processes will make image lost resolution ?

In the Links panel you can check the resolution (ppi), if you scaled it in Illustrator, it could be too low.

An Adobe Illustrator layout containing vector-based text is going to look sharper and better than a JPEG image exported from that layout. The vector-based text is getting converted into pixels. Depending on the export settings the text may end up looking awful. And the original placed JPEG image will be degraded with an additional level of JPEG compression. The better approach for the poster would be saving a PDF file and using lossless LZW compression for any placed images.

The need the image save as JPEG to upload as display, if open in PHOTOSHOP and add text, It is very hard to adjust the text width or alter some text shape (typography design).

Any good idea ?

When you say "upload as display" does that mean you're creating graphics to display on an electronic screen, such as a HDTV display or LED-based variable message display? In either situation the design needs to be tailored to the specific pixel dimensions of those devices rather than scaled up or down to that size. For instance a HDTV display has a fixed grid of 1920 X 1080 pixels. LED signs usually have much lower pixel counts in a wide variety of board shapes. They pose more challenges for making type and graphics look sharp. I usually have to size and position letters where baselines and cap height lines are lining up with the fixed pixel grid as much as possible.
