Every time I open a new project my color pallet is RGB, I need it in CMYK.

Every project I wok on when I open it the color pallet is RGB. I am trying to design for wide format print and need it to be CMYK. I can not find the setting to make the color swatches defult mto CMYK no matter what I do. PLEASE HELP!!!
