@Naspter93613 The problem is almost always related to font cache corruption or how a specific font file is being handled by Illustrator's font engine. Quit all Adobe applications and the Creative Cloud desktop app. Open Finder and navigate to ~/Library/Caches/. Look for any folders with "com.adobe" in their name and trash them. Also, search your system for files with the prefix AdobeFnt*.lst and delete them.

If you noticed in my screenshot, I have two folders with a red icon.

If I try to open it, I would get this message:

Believe it or not, it is generally safe to trash the com.adobe.acrobat.updater folder with the red icon. The /Library/Caches folder is specifically for temporary files that an application creates to speed up its performance. These files are not essential for the program to function, and the application will simply recreate them as needed. The "Access Denied" error I am seeing often indicates that the folder's permissions are corrupted, or the folder itself is in a bad state. Deleting it forces Adobe Acrobat to create a fresh, clean version with the correct permissions (I just keep it for showing others why as a sample) (FYI: This folder contains temporary files related to checking for, downloading, or installing updates.)

After deleting the folder, empty your Trash to permanently remove the files. This can help to ensure that any lingering processes are terminated and that a fresh cache is created upon relaunching Adobe Acrobat. The next time you open an Adobe application, it will create a new, uncorrupted version of the cache folder, which should resolve the permissions error you're seeing.
