Gradient tool only showing variations of gray

I installed the previous version of Illustrator (25.2) to see if that would make a difference but it didn't so I reinstalled the most current version and it's still doing the same thing.

You can change the color of the gradien stop by dragging the color from the swatches drictrly over one of the gradient stops.

what happens if you create a color for a color stop by Color palette instead of Color Picker?
