How do I change all print presets to millimetres instead of points?

All of my 'print' document presets are measured in points, despite the fact that the default Unit in preferences is set to millimetres, and that I have never and will never use points for document dimensions.

 

How do I change all of these to mm?

 

If there was a way to disable points as an option for document sizes, I'd use it.

Looks like you've got the US presets. Is your Creative Cloud set to install English (North Amerika)? You may try to set it to install Apps as  English (International) to get the mm instead of points. After changing it, you may need to reïnstall Illustrator.

Perhaps. I've noticed that my InDesign default print templates are all in Picas even though I have mm set in preferences as well.

Units are a document based setting in Illustrator. What you set up in the preferences only gets applied when the document doesn't have a unit. In order to change this, you need to change the new document profiles. Like this: https://youtu.be/5kcrHjSbN5k
