How do I change the background color inside these text frames?

How do I change the background color inside these text frames? I thought there would be a fill available in the appearance panel, but there isn't.

Use the Direct Select tool (white arrow) to select the frame edge then change the fill in the Appearance panel, Color panel, or Swatches panel.

If you are talking about the pale pink that is showing in your screen shot, that is not a printable color, it's an indication that the font selected for the text is missing.
