How do I make and effect that looks like little pieces?

@lizs43992526 I agree with @Monika Gause . You could almost take any photo and bring it into Photoshop and use any of the 'Filters' and use a "Texture' then save it. There are about six textures.

Then bring it into Illustrator an apply the image trace. It will also give you a different look compared to the standard image trace. 

That will happen automatically when you use Image Trace on a photo of something and trace it in Photorealistic quality.
