How do I remove this corner of this line?

It's probably really simple but im

not sure how to remove this edge of this path that goes over another path with a fill on it.

You cannot change that line ending.

You could hide that part behind another object.

You could use a clipping mask to clip that ending.

You could convert the stroke to outlines and modify the end of the resulting path.

Please note that your screenshot appears to show at least one open path (the one that is overlapping). The options for the end of an open path in the Stroke Panel are limited to a flat edge (as you are showing here) or a rounded edge. However, a simple workaround for this would be to simply put the line which needs trimming behind the line or path that it is intersecting in the stacking order (Object>Arrange>Send Backward).
