How do I use exclude in pathfinder?

So I'm new to illustrator and I was watching someone on YouTube ( https://youtu.be/BYkhfkJdTuM ) on how to draw a bear and she had copied and pasted the ear (3:39) and then grouped it and then excluded it. So my question is how did she do it because when I tried it all I got was a white space in between and when she did it all her colors stayed the same and she was able to delete certain parts.

Did you do this in the same way with the pathfinder effects? You should unlearn that, because it's too complicated.

Just use the pathfinder panel. And if really you just need that same part she has, you could make a copy just as she did, then press Alt and move the object and then subtract.
