How do you change the colour of the blank background in Illustrator?

Can someone tell me how to change the olour of the blank background behind my text as shown in my image?

The best way is to create a colored rectangle behind it.

The white background is not really a background, it shows the paper color. You can hide it by showing the transparency grid.

You can change the paper color in your Document Setup.
