How do you handle dielines and artwork layers in Illustrator?

I’m working with packaging layouts in Illustrator and I’m curious how other designers organize their files when a dieline is involved.

Do you normally keep the dieline on a separate locked layer, or do you use a different layer structure for artwork, cut lines, folds, and finishing elements?

I’m also interested in how you handle bleed around irregular die-cut shapes. Do you extend the artwork manually, use clipping masks, or follow a specific workflow that makes revisions easier?

For those who regularly work with packaging or print production, what file organization method has worked best for you?
