How to add this text fill effect in illustrator?

I'm trying to recreate this logo but I can't figure out how to fill the text in so that the background is similar to the text

This can be done as a combination between "offset path" effect & the shape builder tool

Are you using a font for the text or hand drawing new vector shapes? Are you trying to color the lettering pink like it is in the attached image?
