Question

How to change default text color to the one I'm using?

When I'm using a different color, for example orange, and create a new text, it changes to black, which is the default color, how do I make it use only the color I have selected on my menu without having to make the text, change the color with color picker tool/manually changing the colors?

I don't want the orange color become default, so the paragraphy style options doesn't seem to be the right place to solve this issue

The way to set default behaviour of a tool is to have no artwork selected. So just selecting the text tool then setting the default cover should be the way to do this. The selected colour can have different defaults for different tools. Unfortunately the Text tool is a little different in Illustrator, so you will have to go into the default paragrah style and change the text colour there. (it will also change all text that has not had a text colour override applied to what you set as the default)
